1 cup instant oats
1 cup hotcake flour (preferably creamy vanilla from Pillsbury brand)
1 small box raisins
1 tsp. cinnamon powder
1 tsp. nutmeg powder
1 cup water
canola oil for greasing
Combine all ingredients in a deep bowl. Mix well to make a batter. Pour over a greased hot griddle or frying pan depending on the desired size (in my case I pour it all to form a big round pancake). Cook over low fire until bubbles disappear and slightly golden brown. Turn the pancake on the other side until slightly golden brown. Serve with your favorite syrup on the top.
Preparation time: 5 mins.
Serving suggestions: To make an ala mode you may try putting vanilla ice cream on top or strawberry yogurt ice cream. You may also try putting on fresh fruits and nuts.
